Creamy Potato Soup

Ingredients:

  • 4 large potatoes, peeled and diced
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1/4 cup chopped chives (plus extra for garnish)
  • Salt and pepper, to taste
  • Optional toppings: additional shredded cheddar cheese, crumbled bacon, and sliced green onions

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and minced garlic. Sauté until the onions are translucent and the garlic is fragrant.

  2. Add the diced potatoes to the pot and stir to combine with the onions and garlic. You can substitute fresh potatoes for frozen diced potatoes.

  3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer until the potatoes are tender (about 15-20 minutes).

  4. In a separate bowl, whisk together the cream of chicken soup and softened cream cheese until smooth. Add this mixture to the pot, stirring well to combine.

  5. Allow the soup to simmer for an additional 10-15 minutes, allowing the flavors to meld.

  6. Stir in the shredded cheddar cheese until melted and well incorporated.

  7. Season the soup with salt and pepper to taste. Adjust the consistency by adding more broth if needed.

  8. Just before serving, stir in the chopped chives. Reserve some for garnish.

  9. Ladle the soup into bowls and garnish with additional shredded cheddar cheese, crumbled bacon, and sliced green onions if desired. Sprinkle the reserved chopped chives on top.

  10. Serve hot and enjoy your delicious and creamy potato soup!
